If you feel comfortable with Linux, then try Debian Etch. It is the stable release of the distro and is perfect for servers. It comes with the 2.6.18 kernel by default, so no fooling with compiling your own kernel (unless you want to).

If you are not comfortable with Linux (nned visual aids or simple hardware probing tools) then Ubuntu would be the choice for you! Ubuntu is Debian based, so it has a rock solid foundation to begin with, but with Ubuntu's probing tools and a lot of other neat tools it is super easy to setup a full server for even the newest of n00bs to he Linux world!
