Have you considered starting with
http://www.knoppix.org/. Basicly, it is a live CD, so you can just setup your PC to boot from CD, insert it in the drive, and your done. It does run somewhat slower than a proper install, especially during first boot. But it's a good way of finding your feet before doing a full install.
It also makes a great recovery disk for when you get locked out of the server.
