I haven't heard too much about Ubuntu. But if you want a really stable server then I would use Centos. Its a complete clone of Red Hat EL. And its free. On top of that the Centos has a strong community and they are really helpful if you have any problems. Centos is mostly used for production servers. But would work well on home servers too.
